How to Make Delicious Keto Cheesecake

Cheesecakes have got to be some of my all-time favorite desserts, they have been even way before beginning my keto diet journey. They are so many people’s favorite! 

Everyone has/her own twist on cheesecakes, and I have finally gotten my own twist on it that is this very delicious keto version. It is a perfect keto-friendly cheesecake… I mean look at it!

Everyone has/her own twist on cheesecakes, and I have finally gotten my own twist on it that is this very delicious keto version. It is a perfect keto-friendly cheesecake… I mean look at it!

Let’s take a look at cheesecakes and know their structure: There is the bottom layer, the crust, most often you will find it made of ground biscuits or pastry, and some people even use a sponge cake as a base, in this recipe I use the almond flour mixed with butter and vanilla extract. The filling, which is made to be thicker with its mix of cream cheese, eggs, and substitute sugar.

Cheesecakes may or may not be baked depending on one’s preference. Sometimes people even prefer including some different flavors in their cheesecakes and exclude the cheese and sugar. You will find chocolate and vanilla flavors, and many other flavors of cheesecakes out there… You can always even go the extra mile and decorate your cheesecake with some berries, and in case of a keto diet, it can be topped with some whipped heavy cream, a small number of nuts, or even unsweetened chocolate. Now let’s get started:

How To Make

Crust:

  1. Add all your crust ingredients in a food processor and blend, but not very much to retain some of the crust.
  2. Add your crust mix in your cake pan (it’s preferred to use a removable bottom cake pan)
  3. Even out your crust base with the back of a spoon
  4. Bake in your oven under 350 F for 20-25 minutes
  5. Take it out and let it cool down on the side

Filling :

  1. Beat your cream cheese with your mixer
  2. In another bowl whip your heavy cream
  3. Add your whipped heavy cream to your beaten cheese and add an egg
  4. Add your vanilla and a pinch of salt
  5. Beat well with mixer
  6. Add this filling mix on top of the cooled down crust that you made earlier
  7. Even out the filling
  8. Bake in the oven on 350 F for 30 minutes
  9. Turn off the oven and leave the cake inside the turned-off oven for another 20-25 minutes
  10. Take it out and let it cool down then leave in the fridge for 1-3 hours before serving
  11. Enjoy!

Ingredients
  

Cake Crust:

  • 1+1/2 Cup Almond flour
  • 1/2 Cup Whole Almond
  • 3 Tbsp Sugar substitute
  • 1 tbsp Vanilla extract
  • 3/4 tbsp Butter
  • 1/4 tsp Ground Cinnamon 

Cake Filling

  • 500 grams Cream Cheese
  • 2 tbsp Sugar substitute
  • 1 tsp Vanilla Extract
  • 1/2 cup Heavy cream
  • 1 Egg

Instructions
 

The Crust

  • Give your crust ingredients a quick blend in the food processor, but do not blend for very long to keep some of the crust.
  • Add your crust mix in your cake pan (it's preferred to use a removable bottom cake pan)
  • Use the back of a spoon or spatule to even out the crust layer in the pan.
  • In a 350 F preheated oven, bake the crust for 20-25 minutes.
  • After the crust is baked, take it out, and let it cool down.

The Filling

  • Grab the cream cheese and beat it in the mixer
  • In a different bow, add your heavy cream and whisk it really well
  • Add the whipped heavy cream to the beaten cream cheese, then add an egg
  • Add the vanilla extract and a pinch of salt
  • Beat the ingredients with the mixer
  • Add this mix ontop of the crust that has cooled down, then again, using the back of a spoon or a spatula, even out the layer.
  • In a 350 F preheated oven, bake for 30 minutes.
  • After the thirty minutes, leave the cake inside the oven turned off for another 20-25 minutes
  • Take out the cheesecake then let it cool down completely
  • Place it in the fridge and leave it to chill for 1-3 hours
