Keto Breakfast - Easy Frittata

Ingredients
  

  • 5+ Eggs
  • Butter
  • Parmesan Cheese or any cheese of preference
  • Cherry tomatoes
  • Small onion
  • Mini Bill Pepper
  • Mushrooms
  • Spinach

Toppings:

  • Parsley
  • Dill

Instructions
 

  • Begin by slicing all the vegetables, onion, and mushrooms.
  • On medium heat, add a piece of butter on a pan then add the sliced onion and mushrooms and give them a stir until they get a nice almost-golden color.
  • Then add the rest of the sliced vegetables, spinach, and another piece of butter and give a quick stir.
  • Let cook for 1-2 minutes and give another stir.
  • Take the pan off the heat
  • In an bowl, whisk your eggs, I used three eggs, you can use more depending on the size of your pan and how much of a rise you want your frittata to have.
  • As you whisk the eggs, add cheese and pepper and salt. Don’t add the full amount of cheese yet, just had half of the amount.
  • Add all the cooked vegetables to the bowl and give another good whisk.
  • On low heat add the egg mixture to the pan, and gently stir the everything
  • Then on medium heat, cover the pan with a lid and leave it on heat for 2 minutes, then take off the lid.
  • Now take your pan off the heat, add the rest of the cheese on the frittata mixture, and put it in the oven to bake for 10 minutes.
  • Now take the frittata out and top it with chopped parsley and dill, and it’s ready to serve!.
  • Enjoy!
